Taco Lasagna
Ingredients:
- lasagna noodles - 12
- lean ground beef - 1 pound
- taco seasoning - 1 ounce package
- egg - 1
- ricotta cheese - 15 ounce carton
- shredded cheddar cheese - 4 cups
- chunky salsa - 24 ounce jar
- sour cream, green onions, diced tomatoes - toppings
Instructions:
Prepare lasagna noodles per package directions. In a skillet, crumble and brown beef until no longer pink. Drain grease from meat, add taco seasoning. Stir until combined; set aside. In a bowl, stir together egg and ricotta.
In a 9 x 13 baking dish, layer ingredients - 4 lasagna noodles in the bottom of the pan, 1/3 ricotta, 1/3 beef mixture, 1/3 salsa and 1/3 cheese. Repeat layers 2 more times.
Bake uncovered in a preheated 350 degree oven for 30 - 40 minutes or until casserole has heated through. Let casserole stand 10 minutes before cutting. Garnish with sour cream, sliced green onions and diced tomatoes.
