2 T olive oil
1 lb lean ground beef
small onion, diced
2 garlic cloves, minced
28 ounce can crushed tomatoes
8 ounce can tomato sauce
1 t kosher salt
black pepper to taste
24 ounce package of fresh cheese tortellini
3 c grated mozzarella cheese
In a skillet saute onions and garlic in olive oil, until soft.
Add ground beef and season with salt and pepper. When thoroughly cooked, stir in tomatoes and tomato sauce, stir.
Add uncooked, fresh tortellini and 1 1/2 c mozzarella cheese, stir.
Pour into casserole dish and sprinkle 1 1/2 c mozzarella cheese over the top.
Cover tightly with foil and baked at 350 degrees for 30 minutes.
