Turkey and Pasta Casserole
Ingredients:
- olive oil - 1 T
- onion, chopped - 1 medium
- garlic, minced - 2 large cloves
- red pepper flakes - 1/3 tsp
- ground turkey - 3/4 pound
- whole wheat pasta shells - 2 cups
- marinara sauce - 2 1/2 cups
- chopped fresh parsley - 1/4 cup
- shredded Monterey Jack cheese, divided - 1 1/2 cups
- grated fresh Parmesan cheese - 1/4 cup
Instructions:
Cook pasta per package directions.
In a skillet, heat oil over medium heat, add onion, garlic and red pepper. Sauté until onions have softened. Add crumbled meat and cook until browned. Stir in pasta, marinara, parsley and 1 cup cheese. Spoon mixture into a greased 3 quart casserole dish. Sprinkle 1/2 cup cheese and Parmesan cheese over top.
Bake in a preheated 375 degree oven for 20 minutes or until cheese is melted and bubbly.
