Bacon Bourbon BBQ Chicken
Ingredients:
- BBQ sauce, your choice - 16 ounces
- bourbon - 1/4 cup
- boneless, skinless chicken thighs - 2 pounds
- kosher salt - 2 t
- ground white pepper - 1 t
- garlic powder - 1/2 t
- onion powder - 1/2 t
- paprika - 2 T
- packed brown sugar - 3 T
- smoked paprika - 1 T
- bacon, raw, cut into small pieces - 6 slices
Instructions:
In a bowl, combine BBQ sauce and bourbon, mix well; set aside. Cut chicken into 1 inch pieces.
In a food processor, combine kosher salt, pepper, onion powder, paprika, sugar, smoked paprika and bacon, pulse until completely smooth. Place chicken in a bowl, rub with the bacon paste. Thread chicken onto (pre-soaked) wooden skewers. Grill on medium high heat for about 5 minutes per side, until nearly cooked through. Brush with the bourbon barbecue sauce and cook for one additional minute on each side. Serve with remaining BBQ sauce.
