Baked Cheddar Chicken
Ingredients:
- chicken breasts - 4 large
- Ritz crackers, crushed - 2 sleeves
- salt - 1/4 t
- pepper - 1/8 t
- whole milk - 1/2 cup
- grated cheddar cheese - 3 cups
- dried parsley - 1 t
- cream of chicken soup - 10 ounce can
- sour cream - 2 T
- butter - 2 T
Instructions:
Cut each chicken breast into 3 pieces. Gather 3 pans, pour milk in one pan, place cheese in the second and cracker crumbs mixed with salt and pepper in the third pan. Dip each piece of chicken in the milk, then into the cheese. Pressing the cheese into the chicken with your fingers then press chicken into the cracker crumbs.
Grease a 9 × 13 inch baking pan and place the chicken in the pan. Sprinkle parsley over the chicken. Cover pan with foil. Bake in a preheated 400 degree oven for 35 minutes. Remove foil, bake for an additional 10 - 15 minutes, until edges of the chicken are golden brown and crispy.
Prepare sauce -- in a sauce pan, whisk together, soup, sour cream and butter, over medium high heat until the sauce is hot. Place chicken on serving plate, pour sauce over the chicken, sprinkle with parsley. Serve.
