4 slices America Cheese
4 slice Swiss Cheese
3/4 c chopped broccoli, more or less depends on the size of the chicken breast
4 boneless, skinless chicken breasts
1/2 c flour
1 egg plus 1 T water, beat together for egg wash
1/2 c breadcrumbs or Panko
If chicken is on the thick side, butterfly it, to give yourself more surface area to work with as you wrap it around the filling.
Layer all slices of American cheese on top of each other, slice vertically into four even rectangle cheese stacks. Take one of the rectangle cheese stacks and place it in the center of a whole slice of Swiss. Place some of the chopped broccoli on and around the American cheese stack, wrap the Swiss around both, creating a small packet.
Place cheese and broccoli in the center of a flattened chicken breast, wrap the chicken around it, securing the edges of the chicken together with toothpicks. Repeat with remaining chicken breasts.
Prepare 3 bowls for the breading process. Place flour in one, egg wash in the second and breadcrumbs in the third. Dredge the chicken in flour, egg wash and then breadcrumbs, place seam side up on a greased cookie sheet.
Bake in a preheated 350 degree oven for about 25-30 minutes, or until chicken reaches a temperature of 165 degrees.
