Chicken Pinwheels
Ingredients:
- boneless, skinless chicken breast - 1 pound
- thick pepper bacon - 8 slices
- olive oil - 2 T
- dried thyme - 2 t
- garlic powder - 1 t
- toothpicks soaked in water -
Instructions:
Slice chicken into 1 inch thick slices; set aside. In a skillet slightly cook bacon. Lay chicken strips end to end on work surface. Lay a strip of bacon on top of the chicken slices and roll up with the bacon on the inside. Insert toothpicks to hold everything together.
Drizzle olive oil over the top and bottom of the pinwheels. Sprinkle thyme and garlic powder over chicken rolls. Place chicken on a grill over medium heat, cooked for 5 minutes per side or until chicken is completely cooked.
