3/4 c Bisquick® gluten free mix
1/2 c grated Parmesan cheese
1 t paprika
1/2 t salt
1/2 t garlic powder
In a shallow dish, stir together Bisquick, cheese, paprika and salt.
3 boneless skinless chicken breasts, cut crosswise into 1/2-inch strips
2 eggs, slightly beaten
Line cookie sheet with parchment paper; spray with cooking spray. Dip chicken strips into eggs, then coat with Bisquick mixture; repeat, dip in eggs then Bisquick mixture (each piece should be treated two times). Place chicken on cookie sheet. Spray chicken with cooking spray.
Bake at 450 degrees for 6 minutes, turn chicken over, continue cooking 6-8 minutes until center is no longer pink.
