8-10 chicken drumsticks
1/4 c olive oil
1 t onion salt
1 t paprika
1/2 t ground cumin
1/4 t cayenne
1/2 t ground black pepper
3-4 cloves of garlic
juice of half a lime
1 c lime beer
handful of chopped fresh parsley
salt to desired taste
Place drumsticks in a Ziplock bag. In a bowl mix together oil, onion salt, paprika, cumin, 1/4 t cayenne and black pepper. Add lime juice and garlic, pour in beer, stir together, add salt and parsley. Pour marinade over the chicken, seal, place in refrigerator for at least 3 hours or overnight. Turn bag over a couple of times to marinade all sides of the chicken.
Place on oiled grate, over charcoal and grill for 25 – 30 minutes, basting with marinade every 7 – 8 minutes until internal temperature is above 170 degrees.
, and keep adding the excess marinade to the meat every 10 minutes.
If it’s pink, it’s not done! Grill it nice and golden brown with a light black char.
