Grilled Monterey Chicken
Ingredients:
- chicken breasts, skinless, boneless - 2
- Mozzarella cheese - 1/4 cup
- Monterey Cheddar blend cheese - 1/4 cup
- bacon - 4 slices
- garlic powder - 1/2 tsp
- onion powder - 1/2 tsp
- BBQ sauce, your favorite - for basting
Instructions:
Cut bacon into 1 inch slices, fry bacon in a skillet until crispy; set aside. Season chicken with salt, pepper, garlic powder and onion powder.
Heat grill on high heat for 5 minutes. Grease grates, place chicken on grill over medium heat. Let cook until chicken has an internal temperature of 150 degrees, baste both sides of chicken with BBQ sauce. Continue cooking until internal temperature of 165 degrees is reached.
Place the bacon on top of each piece. Mix the cheeses together, spread evenly over each piece. Place the top of grill down for the cheese melt, watch carefully. Remove from grill, serve.
