Grilled Tequila Chicken
Ingredients:
- limes - 4
- tequila - 1 cup
- olive oil - 1/4 cup
- kosher salt - 2 t
- jalapeno, sliced - 1
- chopped fresh cilantro - 1/2 bunch
- chicken breasts, boneless, skinless - 12
- grated Monterey Jack - 2 cups
Instructions:
Squeeze lime juice into a blender, add tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend mixture until totally combined. Place chicken in a large plastic bag and pour in the lime tequila mixture. Seal bag, turn the bag so all the chicken is covered and marinate in the refrigerator for several hours or overnight. Remove chicken from the bag, (discard marinate) grill over medium high heat for 4 - 5 minutes per side or until chicken is cooked through.
Place Monterey Jack over the top of the chicken breasts, melt. Slice chicken and top with your choice of sides -- avocado slices, Pico de gallo, Jalapeno slices, sour cream, lime wedges, etc.
