Honey Chicken
Ingredients:
- boneless skinless chicken breasts (pounded to a even 1/2 inch thickness) - 4 large
- flour - 2 cups
- salt - 4 t
- black pepper - 4 t
- ground ginger - 3 T
- ground nutmeg - 1 T
- thyme - 2 t
- sage, optional - 2 t
- paprika - 2 T
- cayenne pepper - 1 t
- eggs - 4
- water - 8 T
- olive oil - 2 T
- minced garlic - 3 - 4 cloves
- honey - 1 cup
- soy sauce - 1/4 cup
- black pepper - 1 t
- canola oil for frying -
Instructions:
Sift together flour, salt, 4 t black pepper, ground ginger, nutmeg, thyme, sage, paprika and cayenne pepper. (This makes a large batch, set aside part of it for another use. Store in freezer.)
In a bowl whisk together eggs and water for egg wash.
Salt and pepper chicken breasts, then dip chicken in the flour mixture. Dip chicken into egg wash and again into flour mixture, press the mix into chicken.
In a skillet heat a 1/2 inch canola oil on medium low. Fry 4 - 5 minutes per side until golden brown and crispy.
Drain on a wire rack.
Prepare honey garlic sauce -- in a saucepan, soften minced garlic in 2 T olive oil, over medium heat, DO NOT let it brown. Add honey, soy sauce and 1 t pepper.
Simmer 5 - 10 minutes, remove from heat and cool for a few minutes. Watch carefully as it simmers because it can easily foam over the pot.
Dip chicken into sauce, serve over noodles or rice. Extra sauce can be poured over noodles or rice.
