Key West Chicken
Ingredients:
- soy sauce - 3 T
- honey - 2 T
- vegetable oil - 1 T
- lime juice - from 1 lime
- garlic, minced - 1 clove
- salt and pepper - to desired taste
- skinless, boneless chicken breasts, cut into 1 inch pieces - 4
Instructions:
Soak wooden skewers in water for at least 30 minutes.
In a bowl, combine soy sauce, honey, oil, lime juice, garlic, salt and pepper. Add chicken, toss to coat. Place in refrigerator for 1 hour or more to marinate.
Thread chicken onto skewers. Grill over medium high heat until juices run clear, 4 - 5 minutes per side.
Serve in a salad, over rice, with honey mustard, etc.
