Lime Chicken with Avocado Salsa
Ingredients:
- skinless, boneless chicken breasts - 4 - 6
- chopped fresh cilantro - 3 T
- lime juice - 4 T
- lime, sliced - 1
- olive oil - 2 T
- salt - 1/2 t
- ground cumin - 1/4 t
- cayenne pepper, opitional - pinch
Instructions:
Place chicken in a 13 x 9 inch baking dish. In a bowl, stir together cilantro, lime juice, olive oil, salt, cumin and cayenne pepper. Pour over chicken. Top with lime slices, cover, place in refrigerator for 5 minutes.
Remove chicken from marinade and place on grill or in a preheated 375 degree oven for 20 minutes. Grill or bake until chicken reaches 165 degrees (internal temperature). Remove from oven, place on serving plate, top with avocado salsa. Recipe follows --
In a bowl, mix together 2 avocados, peeled, diced, ½ pint grape tomatoes, chopped, ¼ red onion, chopped, 2 cloves garlic, minced, 1 jalapeno pepper, deseeded, finely diced, ¼ bunch loosely packed cilantro, chopped, 2 limes, zest and juice plus lime wedges for serving (optional), ½ t salt and ½ t ground black pepper. Serve over chicken or other meats.
