Apricot Apple Bars
Ingredients:
- dried apricots, chopped - 1 cup
- apples, peeled, chopped - 2
- apple juice - 4 ounces
- margarine - 1 cup
- brown sugar - 1/2 cup
- whole wheat flour - 1 2/3 cup
- rolled oats - 1 1/4 cup
Instructions:
In a saucepan simmer apricots, apples and apple juice for 10 minutes. Let mixture cool slightly, pour into a food processor blend until smooth. In a bowl, beat together margarine and sugar until creamy, fold in flour and oats. Spread half of the flour and oat mixture in a lightly oiled 13 x 9 inch baking pan. Evenly spread apricot mixture over top. Spread flour mixture over top, press down lightly. Bake in a preheated 350 degree oven for 30 minutes, until light golden.
Cut into bars, let cool in pan before removing. Store bars in an airtight container.
