Banana Cookie Balls
Ingredients:
- cream cheese, soft - 8 ounces
- vanilla wafers, crushed - 2 cups
- mashed ripe bananas - 1/3 cup
- white chocolate, melted - 6 ounces
- yellow food coloring - 8 drops
- finely chopped pecans - 1/3 cup
- semi sweet chocolate, melted - 2 ounces
Instructions:
In a bowl, blend together cream cheese, crumbs and banana. Shape into 1 inch balls.
In the top of a double boiler melt white chocolate and food coloring. Dip balls in melted chocolate; place in single layer on parchment paper lined pan. Sprinkle pecans over top; drizzle with semi sweet chocolate. Place in refrigerator for 1 hour or until firm. Store covered in the refrigerator. Yield 36
