Brownie Sandwiches
Ingredients:
- bittersweet chocolate chips - 7 1/2 ounces
- salted butter - 3 T
- eggs - 2 large
- sugar - 1/2 cup
- brown sugar - 1/4 cup
- vanilla extract - 1 tsp
- baking powder - 1/4 tsp
- Kosher salt - 1/2 tsp
- flour - 1/2 cup plus 2 T
- butter, softened - 3/4 cup
- powdered sugar - 2 cups
- salted caramel sauce - 1/4 cup or to desired taste
- heavy cream - 1/4 cup
Instructions:
Melt together chocolate and butter, stir until smooth; set aside to cool slightly. In a bowl, beat eggs, sugar, brown sugar, and vanilla, on medium speed for 3 minutes, until mixture is pale in color, and a bit foamy. Add chocolate mixture to egg mixture, combine well. Whisk together flour, 3 T salt and baking powder. Add flour mixture to chocolate mixture in 3 batches, mixing until just combined after each addition.
Let dough sit for 10 minutes; (dough will firm up a bit and easier to scoop). Use a 2 tsp scoop, place dough 2 inches apart on parchment paper lined baking sheet pan.
Bake in a preheated 350 degree oven for 7 - 8 minutes, until the surface of the cookies crack, and just set. Cool cookies on the pan for 3 - 4 minutes, carefully remove cookies to a cooling rack. (Use a very thin, flexible spatula to remove cookies from the pan.) Cool cookies before filling.
Prepare buttercream filling -- in a bowl, combine 3/4 cup butter, powdered sugar, heavy cream and salted caramel sauce in the mixer. Spread filling on the bottom of half the cookies, top with second cookie, bottom side touching the filling. Yield 18 sandwiches
