Caramel Filled Bars
Ingredients:
- flour - 2 1/4 cups
- baking soda - 1 t
- salt - 1 t
- butter, softened - 1 cup
- sugar - 3/4 cup
- packed brown sugar - 3/4 cup
- vanilla - 1 t
- egg - 2
- semi sweet chocolate chips - 2 cups
- evaporated milk - 5 ounces
- caramels - 14 ounce bag
- peanut butter - 1/2 cup
Instructions:
In a bowl combine flour, baking soda and salt; set aside. In a second bowl beat butter, sugar, brown sugar and vanilla until creamy. Add eggs, one at a time, beat well after each addition. Gradually mix in flour mixture, stir in chocolate chips. Spread half of the dough into a greased 9 x 13 inch baking pan. Bake in a preheated 375 degree oven for 8 - 10 minutes. While cookie dough is baking melt caramels and evaporated milk in the top of a double boiler. Add peanut butter after caramels are melted, completely melt. Spread caramel mixture over baked dough base. Drop remaining dough by the spoonful on top of the caramel mixture. Return to the oven, bake for 15 - 20 minutes or until light golden brown.
