Caramel Peanut Butter Bars
Ingredients:
- Rice Krispies cereal - 1 3/4 cups
- water - 1/4 cup
- sugar - 1/4 cup
- light Karo syrup - 3 T
- butter, melted - 3 T
- milk chocolate, coarsely chopped - 5 ounces
- creamy peanut butter - 1 cup
- semi sweet chocolate, coarsely chopped - 4 ounces
- light Karo syrup - 1 T
- butter - 2 T
Instructions:
Place cereal in a large bowl; set aside.
Prepare crust -- in a saucepan combine water, sugar and 3 T Karo syrup, stir on medium low heat, until candy thermometer reaches 235 degrees. Remove from heat, stir in 3 T butter, pour mixture over the cereal. Stir to coat, press mixture in a 8 x 8 inch pan, lined with non stick foil. Place in freezer to cool.
Prepare peanut butter layer -- melt together peanut butter and milk chocolate, stir until smooth. Spread evenly over krispy layer, return to freezer to set.
Prepare chocolate glaze -- melt together semi sweet chocolate, 1 T Karo and 2 T butter, stir until smooth. Spread evenly over peanut butter layer, place in refrigerator to set. Cut into squares, store covered, in the refrigerator.
