Caramel Pecan Bars
Ingredients:
- butter, cubed - 1 c
- light brown sugar, packed - 2 1/4 c
- eggs, room temperature - 2
- vanilla extract - 1 T
- flour - 1 1/2 c
- baking powder - 2 t
- salt - 1/2 t
- ground cinnamon - 1/2 t
- chopped pecans - 2 c
- powdered sugar, for sprinkling on top -
Instructions:
In a saucepan melt butter and brown sugar together over medium-low heat, stir to combine. Turn heat off. In a bowl, beat eggs and vanilla together. With mixer on low slowly add the hot sugar. In a separate bowl whisk together flour, baking powder, salt and cinnamon. Gradually add to the sugar mixture beating on low just until combined. By hand stir in pecans. Evenly spread batter into a greased 9 x 13 inch pan. Bake in a preheated 350 degree oven for 20 - 22 minutes for a fudge like bar OR 25 - 27 minutes for a cake like bar. Cool on a wire rack. Cut into bars and dust with powdered sugar.
