Caramel Pecan Cheesecake Bars
Ingredients:
- graham cracker crumbs - 3/4 cup
- chopped pecans - 1/4 cup
- butter, melted - 1/4 cup
- cream cheese, softened - 8 ounces
- sugar - 1/4 cup
- sour cream - 1/4 cup
- flour - 1 T
- egg - 1
- vanilla extract - 1 t
- caramel ice cream topping - 1/3 cup
- chopped pecans - 1/4 cup
- caramels - 15
- milk - 1 T
- coarse sea salt - 1/4 t
Instructions:
Stir together graham cracker crumbs, 1/4 cup pecans and butter; press into the bottom of a foil lined and lightly greased 8 x 8 inch pan. Bake in a preheated 350 degree oven for 8 minutes. Remove from oven, cool on wire rack.
In a bowl beat cream cheese until smooth. Combine sugar and flour; gradually add to cream cheese, beating just until blended. Mix in sour cream and caramel. Blend in egg, stir in vanilla. Spread mixture over crust. Bake at 350 degrees for 35 minutes or until set. Cool on a wire rack.
Sprinkle 1/4 cup pecans over cheesecake. Place in refrigerator for at least 2 hours.
Melt together caramels, salt and milk, stir until smooth, drizzle over cheesecake. If desired drizzle chocolate over cheesecake.
