Caramel Snickerdoodle Bars
Ingredients:
- butter, softened - 1 cup
- packed light brown sugar - 2 cups
- eggs - 2
- vanilla extract - 2 t
- flour - 2 1/2 cups
- baking powder - 2 t
- salt - 1 t
- sugar - 1/4 cup
- cinnamon - 3 t
- dulce de leche - 2 - 13.4 ounce cans
- white chocolate chips - 12 ounces
- heavy whipping cream - 1/3 cup
- light corn syrup - 1 T
Instructions:
In a bowl cream together butter and brown sugar until light and fluffy, mix in eggs and vanilla.
In a bowl combine flour, baking powder and salt, add to the creamed mixture. Mix until just combined.
Pat into a parchment lined 9 x 13 inch baking pan. (Have parchment paper hang 1 inch over edge of pan for easy removal.)
In a bowl combine sugar and cinnamon, sprinkle 2 T cinnamon sugar mixture over the bars.
Bake in a preheated 350 degree oven for 30 minutes until edges are light brown. Cool completely.
Place the dulce de leche in a microwave safe bowl. Microwave on high for 30 - 60 seconds, until spreading consistency.
Spread evenly over top of the cooled bars.
In a saucepan, combine white chocolate chips, cream and corn syrup. Stir frequently until smooth. Cool slightly, then carefully pour mixture over dulce de leche. Sprinkle remaining cinnamon sugar evenly over the top.
Cover, place in refrigerator until chocolate layer is set, at least 1 hour. Remove from pan, cut into bars. Store covered in the refrigerator.
