Caramel Sugar Cookies
Ingredients:
- sugar - 1 1/2 cup
- flour - 2 1/2 cups
- baking powder - 1/2 tsp
- salt - 3/4 tsp
- butter, room remperature - 14 T
- vanilla extract - 2 tsp
- eggs - 2
- caramel bits - 1 cup
- Kosher salt - 2 T
Instructions:
In a bowl, whisk together flour, baking powder and salt; set aside.
In a second bowl, with mixer on medium speed, mix butter and sugar together until light and fluffy. Add eggs 1 at a time, mix in vanilla. With mixer on low speed, slowly add flour mixture until well combined. Add caramel bits, mix on low until combined.
Roll dough into one inch sized balls. Place cookies 2 inches apart on a parchment paper lined baking sheet, press down slightly. Sprinkle the top of each cookie with a little kosher salt.
Bake in a preheated 350 degree oven for 13 minutes, rotate the pan halfway through the baking. Cool cookies on the pan for 2 minutes, remove cookies from pan and place on a cooling rack to cool completely.
