Carrot Pecan Cookies
Ingredients:
- butter, softened - 1/4 cup
- coconut oil - 1/4 cup
- sugar - 1/3 cup plus 1 T
- molasses - 1 T
- vanilla extract - 1 t
- egg - 1
- flour - 1 cup
- baking powder - 1 t
- salt - 1/4 t
- cinnamon - 1 t
- nutmeg - 1/4 t
- grated carrot - 1/2 cup
- chopped pecans - 1/4 cups plus more for garnish
- cream cheese, softened - 2 ounces
- butter, softened - 1/4 cup
- orange zest - 1 t
- powdered sugar - 1 cup
Instructions:
In a bowl cream 1/4 c butter, coconut oil, sugar and molasses together until completely smooth, stir in vanilla and egg. Stir in dry ingredients until just combined. Carefully fold in carrot and nut. Place small smounds onto parchment paper lined baking sheets and bake in a preheated 350 degree oven for 8 - 9 minutes or until edges are brown. Cool on baking sheet for 2 minutes, remove place on cooling rack. Cool to room temperature.
Prepare frosting -- in a bowl, whip together cream cheese, 1/4 c butter, orange zest and powdered sugar until smooth. Spread each cookie with frosting, garnish with pecans.
*If you do not have coconut oil, simply use butter.
**If you do not have granulated sugar and molasses, simply use brown sugar.
