Cashew Cookies
Ingredients:
- butter - 1 cup
- sugar - 1 1/2 cups
- flour - 2 1/4 cups
- eggs - 2
- baking soda - 1 tsp
- Kosher salt - 1/2 tsp
- salted, roasted cashews, chopped - 2 cups
- butterscotch chips - 1 bag
Instructions:
In a bowl, cream together butter and sugar until fluffy. Add eggs and beat until fluffy. In a second bowl, mix together flour, baking soda, salt, cashews and butterscotch chips. Add dry ingredients to butter mixture; mix until well combined.
Scoop cookies onto parchment paper lined cookie pans. Bake in a preheated 350 degree oven for 10 minutes; remove from the sheet place on wire rack to cool.
