Cheesecake Brownie Bites
Ingredients:
- butter - 1/2 cup
- cream cheese - 3/4 cup
- sugar - 1/3 cup
- eggs - 2
- vanilla extract - 1 t
- semi sweet chocolate chips - 8 ounces
- butter, diced - 6 T
- eggs - 4
- sugar - 1 1/2 cups
- vanilla extract - 2 t
- flour - 1 1/4 cups
- baking soda - 1 t
- salt - pinch
Instructions:
In a bowl add 1/2 cup butter, cream cheese and 1/3 cup sugar, beat on low speed until creamy. Stir in 2 eggs and 1 t vanilla; beat until just combined; set aside.
Prepare brownie batter -- melt together chocolate and 6 T butter; cool slightly. In a bowl, beat 4 eggs and 1 1/2 cups sugar until thickened and pale in color, about 5 - 7 minutes. With mixer on low speed, stir melted chocolate into egg mixture. Fold in flour, baking powder and salt. Pour half of brownie batter into 13 x 9 inch baking pan lined with parchment paper (leave about 1 inch overhang on the edges). Place dollops of cheesecake filling over brownie batter. Drizzle remaining brownie batter over cheesecake layer, gently swirl with a knife. Bake in preheated 350 degree oven for 40 minutes or until just set. Remove pan from oven, place on wire rack to completely cool before cutting.
