Cheesecake Cookies
Ingredients:
- graham crackers, finely crushed - 1 1/4 cup
- flour - 1 cup
- baking powder - 1 1/2 t
- butter, softened - 1/2 cup
- brown sugar, packed - 1/2 cup
- egg, separated - 1
- cream cheese, softened - 3 ounces
- sugar - 1/2 cup
- lemon zest - 2 t
- vanilla - 1/2 t
Instructions:
In a large bowl, stir together graham cracker crumbs, flour and baking powder. In a second bowl, beat together butter and brown sugar. Add egg white, beat until well combined. Add to the graham cracker crumbs, blend until just combined. In a bowl, beat together until well combined cream cheese, sugar, egg yolk, lemon zest and vanilla; set aside. With a small ice cream scoop, scoop cookie dough and place on parchment lined baking sheet. Flatten slightly, pressing your thumb in the center of each ball to create a small bowl shape. Spoon cream cheese mixture into each indent. Bake in a preheated 350 degree oven for 12 minutes until filling is barely set and cookies are lightly golden. Cool on baking sheet for 5 minutes, remove, place on wire rack to completely cool.
