Chex Mix with Peanut Butter Cups
Ingredients:
- Chocolate Chex cereal - 8 cups
- packed brown sugar - 3/4 cup
- butter OR margarine - 6 T
- light corn syrup - 3 T
- baking soda - 1/4 t
- Mini Reese's Peanut Butter Cups - 1 cup
- miniature marshmallows - 1 cup
- caramel bits - 1/2 cup
- heavy cream - 1T
- milk chocolate chips - 1/2 cup
- vanilla baking chips - 1/2 cup
- coarse sea salt - 1 t
Instructions:
Place cereal in a large microwavable bowl; set aside. Microwave brown sugar, butter and corn syrup uncovered on high 1 - 2 minutes until melted and smooth, stir in baking soda until dissolved.
Pour caramel mixture over cereal, stir. Place in microwave on high for 3 minutes, stir mixture every minute. Spread mixture on waxed paper lined cookie sheet. Cool for 10 minutes, break into bite size pieces. Sprinkle peanut butter cups and marshmallows evenly over mixture.
Melt caramel bits and cream until smooth, drizzle over mix. Melt chocolate chips until smooth, drizzle over mix. Melt vanilla chips until smooth, drizzle over mix.
Quickly sprinkle salt over mix. Place in refrigerator until set. Break apart, store in a tightly covered container.
