Chocolate Cake Cookies
Ingredients:
- butter, room temperature - 1/2 cup
- sugar - 1/3 cup
- egg - 1
- vanilla extract - 1 tsp
- baking powder - 1 tsp
- salt - 1/2 tsp
- flour - 1 1/3 cups
- semi sweet chocolate chips, melted - 1/2 cup
- butter - 1/2 cup
- unsweetened cocoa powder - 2 T
- milk - 3 T
- powdered sugar - 2 1/2 cujps
Instructions:
In bowl, beat together 1/2 cup butter and sugar together until light. Add egg and vanilla, continue mixing until incorporated. Mix in baking powder and salt.
Turn mixer to low and slowly add in flour. Dough will be thick. In a microwave melt chocolate chips and stir melted chips into cookie dough.
Drop dough by tablespoon sized mounds onto parchment lined baking sheet. Bake in a preheated 350 degree oven for 7 - 8 minutes until cookies JUST appear set. They will still be very soft on the inside. DO NOT OVERBAKE. Place on wire rack to completely cool.
Prepare icing -- in a saucepan, combine 1/2 cup butter, cocoa powder and milk over medium heat, whisk until melted together. Remove from heat and whisk in powdered sugar.
Place cookies on parchment paper and pour icing over cookies. Store in airtight container.
