Chocolate Chip Lava Cookies
Ingredients:
- butter, softened - 1/2 cup
- sugar - 1/2 cup
- packed light brown sugar - 1/2 cup
- egg - 1
- vanilla extract - 1/2 T
- flour - 1 3/4 cup
- salt - 1/2 t
- baking soda - 1/2 t
- milk chocolate chips - 12 ounce bag
Instructions:
Place 1/2 cup chocolate chips in a Ziploc bag, seal shut. Lay the Ziploc bag flat in the microwave, spread chocolate chips in a single layer. Microwave for 30 seconds. Remove bag and flip, microwave for an another 10 - 15 seconds until all the chips are softened; set aside to cool. In a bowl, cream together butter sugar and brown sugar until light and fluffy, add egg and vanilla, beat until well combined.
In a second bowl, whisk together flour, salt and baking soda. Add to the wet ingredients, beat on low speed until just combined. Stir in 1 cup chocolate chips. Take 1 1/2 - 2 T of dough, flatten, place in the well of greased muffin tin. Repeat for a total of 10 cookies. Cut a small tip in the corner of the Ziploc bag, gently squeeze a layer of chocolate over each cookie. Top chocolate with remaining dough.
Bake in a preheated 350 degree oven for 15 - 20 minutes, until edges are just browned. Remove from oven, run a knife around the edges for easy removal. Cool completely before removing from pan, again before removing run a knife around the edge to help remove.
