Chocolate Chunk Oatmeal Bars
Ingredients:
- old fashioned oats - 2 1/2 cups
- flour - 1 cup
- white whole wheat flour - 1 cup
- brown sugar - 1 cup
- baking soda - 1 t
- salt - 1/2 t
- canola oil - 1 cup
- eggs - 2
- vanilla extract - 1 T
- dark chocolate, chopped into chunks - 8 ounces
Instructions:
In a bowl, combine oatmeal, flour, brown sugar, baking soda, salt, oil, eggs and vanilla; beat until combined. Mix in 1 cup chocolate chunks.
Spread half the batter evenly in a greased parchment paper lined 13 x 9 inch baking pan. Sprinkle remaining chocolate chunks over batter, spread remaining dough over the chunks. Chocolate chunks do not have to be completely covered with dough. If desired add more chocolate to the top.
Bake in a preheated 350 degree oven for 20 - 25 minutes, DO NOT over bake. Cool bars in the pan for 30 minutes before slicing. Bars will be crumbly.
