Chocolate Kahlua Cookies
Ingredients:
- flour - 2 c plus 2 T
- baking soda - 1/2 t
- cocoa powder - 1/4 c
- instant coffee powder - 3 T
- sea salt - 1/4 t
- butter (melted and cooled for 15 minutes) - 1/2 c
- brown sugar - 1 c
- sugar - 1/2 c
- egg plus egg yolk, at room temperature - 1 plus 1 egg yolk
- vanilla extract - 2 t
- Kahlua - 1/4 c plus 1 t
- chocolate chunks - 1 c
- ssea salt for topping -
Instructions:
In a bowl mix together flour, cocoa, coffee powder, salt and baking soda and set aside. In another bowl, combine melted butter and sugars. Add egg, egg yolk, and vanilla and stir. Slowly stir in coffee liqueur. Gradually add flour mixture and mix until a dough forms and comes together. If needed add another 1 t Kahlua. Fold in the chocolate chunks. Refrigerate for 30 minutes.
Remove dough from the refrigerator and roll into balls the size of a ping pong ball. Place on parchment paper lined baking sheet. Bake at 325 degrees for 10 - 12 minutes or until the edges are set and the center is soft and puffy. DO NOT over bake. Remove from oven and sprinkle with sea salt.
