Chocolate Mallow Cookies
Ingredients:
- milk chocolate cake mix - 1 box
- eggs - 2
- vegetable oil - 1/3 cup
- margarine, softened - 1/2 cup
- milk - 1/4 cup
- vanilla extract - 1 tsp
- unsweetened cocoa - 3 tsp
- powdered sugar - 2 - 3 cups to desired spreading consistency
Instructions:
In a bowl, mix together dry cake mix, eggs and oil. Roll into 1 inch balls. Place on greased cookie sheet and bake in a preheated 350 degree oven for 5 - 6 minutes.
Remove from oven, immediately place 6 - 7 mini marshmallows on each cookie. Return cookie sheet to the oven for 2 minutes. (marshmallows will puff up)
Cool cookies on the cookie sheet for a couple of minutes, then transfer to wire rack. Cool completely and frost.
Prepare frosting -- in a bowl, mix together margarine, milk, vanilla, cocoa and powdered sugar. Spread frosting over cookies.
