Chocolate Pecan Bars
Ingredients:
- flour - 1 cup
- baking powder - 1/4 t
- salt - 1 t
- packed light brown sugar - 1/3 cup
- pecans, toasted, chopped - 1/4 cup
- cold butter, cut into small pieces - 6 T
- butter, melted - 4 T
- packed brown sugar - 1/2 cup
- light Karo Syrup - 1/3 cup
- vanilla extract - 2 t
- bourbon OR dark rum - 1 T
- salt - 1/2 t
- egg, lightly beaten - 1
- pecans, toasted, chopped coarse - 1 3/4 cup
- coarsely chopped bittersweet or semisweet chocolate - 4 - 6 ounces
Instructions:
Place flour, baking powder, 1 t salt, 1/3 cup brown sugar and 1/4 cup pecans in a food processor. Process mixture until it resembles coarse cornmeal, add 6 T cold butter and pulse until combined. Pat mixture into a 9 x 9 inch baking pan lined with foil making sure there is some overhang and grease foil.
Bake in a preheated 350 degree oven for 20 minutes, until golden.
While the crust is baking, prepare filling -- whisk together 4 T butter, 1/2 cup brown sugar, corn syrup, vanilla, bourbon and 1/2 t salt. Add egg and whisk until combined.
When crust is done, pour filling over hot crust. Sprinkle pecans and chocolate evenly over top. Gently push the topping down into filling.
Bake at 350 degrees for 25 - 30 minutes. Cool bars in pan on a wire rack for 1 hour. Lift bars out of the pan and cut into bars. Store covered.
