Chocolate Pecan Pie Bars
Ingredients:
- pecan shortbread cookies - 18 crushed
- flour - 2 c
- margarine, melted (divided) - 1/4 c
- eggs, slightly beaten - 2
- brown sugar - 1/2 firmly packed
- light corn syrup - 1/2 c
- vanilla - 1 t
- pecans - 1 c chopped
- miniature semi-sweet chocolate chips - 1/2 c
Instructions:
In small bowl stir together cookies, flour and 2 T butter. Press into a ungreased 11 x 7 inch baking pan. Bake in a preheated 350 degree oven for 10 minutes.
In a bowl stir together eggs, brown sugar, corn syrup, 2 T butter and vanilla. Stir in pecans and chocolate chips. Spread evenly over hot crust. Bake another 20 minutes or until filling is set. Cool completely in pan on wire rack. Cut into bars.
