Chocolate Rice Cereal Bars
Ingredients:
- maple syrup - 1/2 cup
- brown rice syrup - 1/2 cup
- almond butter - 1/2 cup
- chopped bittersweet 70 % chocolate - 1/2 cup
- extra virgin coconut oil - 2 T
- fine sea salt - 1/4 tsp
- crisp rice cereal - 4 cups
- Topping --
- extra virgin coconut oil - 2 T
- chopped bittersweet 70% chocolate - 1/2 cup
- toasted sliced almonds - 1/4 cup
- flaky salt - 1/4 tsp
Instructions:
In a saucepan, bring maple and rice syrup to a rolling boil for 1 minute, stir frequently (DO NOT let it boil over). Remove from heat; stir in almond butter, 1/2 cup chocolate, 2 T coconut oil and 1/4 tsp salt until smooth and chocolate is melted. Fold in cereal; firmly press mixture (with damp fingers) into a 8 x 8 inch parchment paper lined pan.
Prepare topping -- in a saucepan, over very low heat, melt together 1/2 cup chocolate and 2 T coconut oil, stir constantly just until melted (DO NOT scorch the chocolate). Spread melted chocolate mixture evenly over rice mixture. Sprinkle almonds and salt over the top.
Cool bars at room temperature for 2 hours or until firm.
Best eaten the day prepared. Will keep at room temperature for several days, although the cereal will soften slightly.
