Christmas Meringue Cookies
Ingredients:
- egg whites - 2
- cider vinegar - 1/8 tsp
- salt - 1/8 tsp
- sugar - 1/3 cup
- peppermint candy canes, crushed - 3
Instructions:
In a glass bowl, whip egg whites, vinegar and salt until soft peaks form. Gradually add sugar, continuing to whip until stiff peaks form, about 5 minutes. Fold in 1/3 candy canes. Drop by heaping teaspoonfuls, one inch apart onto foil lined or parchment paper lined cookie sheets. Sprinkle remaining crushed candy canes over the top.
Bake in a preheated 225 degree oven for 90 minutes, or until dry. Cool on baking sheets.
