4 ounces cream cheese
3 T sugar
2 refrigerated pie crust
1 t vanilla extract
2 T melted butter
In a bowl combine cheese, vanilla and 3 T sugar; set aside. On a work surface unroll the pie crusts and spread cream cheese mixture over one pie crust. Place the other crust on top and cut cookies in desired shape. Gently press down the edges with a fork to seal them. Make Churro twists from the scraps.
Place on parchment lined baking sheet. Bake in a preheated 350 degree oven for 12 minutes, until firm and slightly golden. Let cool.
Mix together 2 T cinnamon and 1/2 c sugar. Brush both sides of cookies with melted butter, coat both sides with cinnamon sugar mixture.
