Coffee Cream Bars
Ingredients:
- raw cashews - 1 cup
- dates - 1 cup
- instant coffee granules - 2 t
- water - 2 T
- coconut cream - 14 ounce can
- instant coffee granules - 2 t
- maple syrup - 3 - 4 T
- Kahlua OR Baileys - 2 T
- coconut oil, melted - 3 T
- cacao powder - 3 T
- maple syrup - 3 T
Instructions:
Prepare crust -- in your food processor combine cashews, dates and 2 t coffee granules pulse until the mixture comes together. (If needed add water for mixture to come together.) Press evenly into a 8 x 8 inch square baking pan lined with parchment paper.
Prepare filling -- process coconut cream, 2 t coffee granules, maple syrup and Kahlua in the food processor until smooth, spread evenly over the crust. Cover, place in the freezer.
Prepare topping -- in a bowl mix together coconut oil, cacao powder and maple syrup until smooth. Spread evenly over Kahlua layer.
Freeze bars until firm. To serve, thaw bars at room temperature for 10 - 15 minutes, cut and serve.
