Creole Pecan Praline Bars
Ingredients:
- butter, softened - 1 cup
- salt - 3/4 t
- packed light brown sugar - 2 cups
- flour - 4 cups
- large pecan halves - 4 cups
- butter - 1 1/2 cups
- light brown sugar - 2/3 cup
Instructions:
Line a 17 x 13 inch baking pan with aluminum foil, with foil extending over all edges; set aside.
Prepare crust -- in a bowl, beat 1 cup butter until soft, add salt and 2 cups brown sugar, beat. Add flour and beat for 1 minute or until ingredients form tiny crumbs that hold together when pressed between your fingers. Evenly and firmly press mixture into prepared pan. Cover entire crust with pecans halves, flat side down, side by side all in the same direction; set aside.
Prepare topping -- in a saucepan add 1 1/2 cups butter and 2/3 cup brown sugar, stir over high heat with a wooden spatula until mixture comes to a hard boil over the entire surface. Continue to stir over the heat for 30 seconds. Remove from heat and carefully pour the hot mixture over the pecans (cover entire surface.)
Bake in a preheated 350 degree oven for 22 minutes. Remove from oven, cool and place in refrigerator until cold. Using the foil lift bars from the pan and cut.
