Crumbly Cake (cookie)
Ingredients:
- flour - 3/4 cup
- flour - 1 1/2 cup
- blanched almonds, finely ground - 1 1/2 cup
- sugar - 1/2 cup
- salt - 1/4 t
- vanilla extract - 1 t
- almond extract 1/2 t OR Amaretto 1 - 2 t -
Instructions:
In a bowl, whisk together flour, sugar, almonds and salt. With your fingertips work butter into the dry ingredients, about halfway through add the extracts, continue working the mixture until fully incorporated. (there should be no dried crumbs) Squeeze mixture to form 1/4 - 1 inch size clumps of dough. Gently press 1/4 of the crumbs into bottom of a buttered springform pan. Evenly sprinkle remaining dough over the top. Bake in a preheated 350 degree oven for 20 minutes or until the cookie starts to turn pale golden. Lower oven temperature to 300 degree, continue to bake for 20 minutes until the cookie is dry and crisp. Cool on a wire rack, remove from pan, place on serving plate. If desired dust with powdered sugar.
To serve -- place on large seving plate, DO NOT cut, with your fingers break off serving pieces.
