Instructions:
Prepare cookie dough -- In a bowl combine butter and both sugars, beat for 2 - 3 minutes, until light and fluffy. Scrape the sides of the bowl, add egg and vanilla, beat on low speed until combined. Add flour and salt, mix on low speed until most of the flour streaks are gone.
Stir in chocolate chips, until well mixed. Use a 1 inch cookie scoop to form the dough into 1 inch balls, place them on a waxed paper lined baking sheet. Place dough in the refrigerator for 1 hour until firm. (Dough can be made several days in advance, keep covered and store in the refrigerator until ready to use.)
Prepare batter --In a bowl whisk together flour, baking powder, salt and sugar. Add milk and 2 t oil, whisk until batter is smooth and free of lumps. Heat oil to 360 degrees. (Keep oil at 360 degrees) Dip a cold cookie dough ball into the batter turning until it’s completely covered. Let excess batter drip back into the bowl, gently place it into the oil. Fry 3 - 4 at a time for about 2 minutes per side, flip as necessary so they cook evenly. Fry the cookie dough balls until they’re puffed and a dark golden brown on all sides. Remove them from oil, place on a paper towel lined baking sheet to drain. Yields 20
Best served warm. Serve plain or garnish with a drizzle of chocolate sauce, whipped cream or powdered sugar.
