Double Chip Cookies
Ingredients:
- butter - 1 cup
- light brown sugar - 1 1/4 cups
- sugar - 1/2 cup
- egg - 1
- egg yolk - 1
- vanilla - 1 t
- flour - 2 cups
- uncooked rolled oats - 1 cup
- baking soda - 1/2 t
- kosher salt - 1/2 t
- ground cinnamon - 1/4 t
- white chocolate chips - 1 cup plus extra for garnishing if desired
- semi sweet chocolate chips - 1 cup plus extra for garnishing if desired
- roughly chopped toasted pecans - 1 cup plus extra for garnishing if desired
Instructions:
In a saucepan, over medium heat melt the butter, remove from heat. Add brown sugar and sugar stir until sugars are incorporated and smooth. Place mixture in refrigerator for 10 minutes.
Remove from refrigerator, stir in egg, egg yolk and vanilla. Add flour, oats, baking soda, salt and cinnamon and mix together. Stir in white chips, chocolate chips and pecans.
Use a medium-size scoop to form cookies, place mounds on greased cookie sheets. If desired, place extra chips and pecans on top of dough mounds.
Place pans in refrigerator for 30 minutes. Remove from refrigerator. Bake in a preheated 325 degree oven for 14 - 18 minutes or until golden brown. Cool on pan, then place on cooling rack. Yields about 3 dozen.
