Fudge Filled Oatmeal Bars
Ingredients:
- butter, melted, - 1/2 cup
- egg - 1
- packed light brown sugar - 1 cup
- vanilla extract - 1 T
- old fashioned rolled oats - 1 1/2 cups
- flour - 1 cup
- salt - pinch
- semi sweet chocolate chips, divided - 1 1/3 cup
- sweetened condensed milk - 7 ounces
Instructions:
Line an 8 x 8 inch baking pan with foil, spray foil with cooking spray; set aside.
Whisk together melted butter, egg, brown sugar and vanilla until smooth. Add the oats, flour, stir until just combined, DO NOT overmix. Spread 3/4 of the batter evenly into prepared pan. Microwave 1 cup chocolate chips and sweetened condensed milk until mixture is melted and smooth, about 45 - 60 seconds.
Quickly pour chocolate mixture evenly over crust. Crumble reserved oatmeal mixture over the chocolate layer. (Entire chocolate surface will not be covered.)
Bake in a preheated 350 degree oven for 25 minutes, or until top is set; (pale in color for soft bars; golden colored for crunchier bars.) Remove from oven, immediately sprinkle 1/3 cup chocolate chips evenly over bars. Chips will soften and melt slightly, but stay intact.
Cool bars in the pan for 1 hour before cutting. Store in a airtight container at room temperature for up to 1 week.
