German Chocolate Cookies
Ingredients:
- butter, softened - 1 cup
- packed light brown sugar - 1 cup
- sugar - 1 cup
- vanilla extract - 2 t
- eggs, beaten - 2
- flour - 2 1/4 cups
- unsweetened cocoa powder - 1/2 cup
- baking soda - 1 t
- salt - pinch
- evaporated milk - 1 cup
- sugar - 1 cup
- egg yolks - 3
- butter - 1/2 cup
- vanilla - 1 t
- sweetened shredded coconut - 1 1/3 cup
- chopped pecans - 1 cup
- semi sweet chocolate chips - 1/4 cup
Instructions:
In a bowl, blend together butter, brown sugar, sugar, vanilla and eggs. In another bowl, stir together flour, cocoa, baking soda and salt. Gradually add flour mixture to butter mixture, blend well.
Place tablespoonful of dough onto parchment paper lined baking sheets, bake in a preheated 375 degree oven for 8 - 10 minutes. Cool on a baking rack. Yield 3 dozen cookies.
Prepare frosting -- in a sauce pan add evaporated milk, sugar, egg yolks, butter and vanilla over medium heat. Stir to combine, continue stirring until thickened, about 11 - 12 minutes. Remove from heat, add coconut and pecans. Beat until thick enough to spread. Spread frosting over cookies. Melt chocolate chips and drizzle over cookies.
