Gingerbread Cookies
Ingredients:
- flour - 3 cups
- ground ginger - 2 t
- baking soda - 1 t
- nutmeg - 1/4 t
- cinnamon - 1 t
- salt - 1/4 t
- butter, room temperature - 3/4 cup
- packed brown sugar - 3/4 cup
- molasses - 1/2 cup
- egg - 1
- sugar - 1/4 cup
- vanilla - 1 t
- white chocolate chips - 1 cup
Instructions:
In a bowl combine flour, ginger, cinnamon, baking soda, nutmeg and salt. In a second bowl beat together butter and brown sugar with mixer on medium speed until light and fluffy. Beat in molasses, egg and vanilla. On low speed gradually beat in flour mixture until well mixed. Press dough into a thick flat disk, wrap with plastic wrap. Place in refrigerator for 4 hours or overnight.
Roll dough into 1-inch balls, roll in sugar. Place 2 inches apart on ungreased baking sheets. Bake in preheated 350 degree oven for 8 - 10 minutes or until edges of cookies just begin to brown. Immediately press about 5 - 6 chips into center of each cookie. Remove from pan place on cooling racks; cool completely. Store cookies in airtight container.
