Grasshopper Cookies
Ingredients:
- Devil's Food Cake mix - 1 box
- eggs - 2
- butter, melted - 1/2 cup
- vanilla extract - 1 t
- brown sugar - 3 T
- butter, softened - 3/4 cup
- peppermint extract - 1 1/2 t
- powdered sugar - 2 - 3 cups
- milk - 1 - 2 T if needed
- green food coloring - to desired color
- semi sweet chocolate chips - 1 1/2 cups
- butter - 3 T
- Andes Mint Candies, chopped - for garnish
Instructions:
Prepare cookies -- in a bowl, combine cake mix, eggs, 1/2 cup butter, vanilla and sugar.
Form dough into balls a little larger than a tablespoon and place on greased cookie sheets to bake. (Pat each dough ball down a little because cake mix cookies tend to bake up tall.) Bake in a preheated 350 degree oven for 7 - 9 minutes and cool on racks.
Prepare frosting -- in a bowl, beat 3/4 cup butter for 2 minutes. Add peppermint extract and food coloring, slowly add powdered sugar until you reach spreading consistency. Add 1 - 2 T milk if it gets too thick. Spread over cooled cookies.
Prepare chocolate glaze -- melt chocolate chips and 3 T butter together in microwave for about 30 seconds, stir, microwave in 10 second increments and stir until smooth. Spoon glaze onto center of frosted cookies, garnish top with chopped Andes Mint Candies.
