Kit Kat Crunch Bars
Ingredients:
- creamy peanut butter - 1 heaping cup
- light corn syrup - 1/2 cup
- sugar - 1/2 cup
- light brown sugar - 1/4 cup packed
- vanilla extract - 1 T
- Rice Krispies cereal - 3 cups
- Kit Kat candy bars, diced - 3 - 1.50 ounce
- semi sweet chocolate chips - 1 cup
- creamy peanut butter - 1/4 cup
- Rice Krispies cereal - 1 cup
Instructions:
In a microwave safe bowl, combine 1 heaping cup peanut butter, corn syrup, sugars, heat on high power for 1 minute to melt. Stir mixture, return bowl to microwave and heat for another minute on high power. Stir in vanilla. Stir in 3 c cereal. Place foil in a 8 inch square pan and buttered, evenly spread mixture into pan and press down slightly; set pan aside.
Prepare topping -- in a microwave safe bowl, combine chips and 1/4 cup peanut butter, completely melt, stir until smooth, stir in 1 cup cereal. Pour chocolate mixture over base, press firmly with a spatula and smooth top. Place Kit Kats evenly and tightly spaced over chocolate. After you have placed the Kit Kat on the chocolate, gently push the pieces down so they will adhere into the crispy layer. Cover pan with foil, place in refrigerator to set up for 2 - 3 hours, or until chocolate layer is completely set before slicing. Store covered at room temperature for 1 week, in the refrigerator for 2 weeks and freezer for 2 months.
