Krispie Peanut Butter Brownies
Ingredients:
- butter - 3/4 cup
- semi sweet chocolate chips, divided - 1 3/4 cups
- sugar - 1 1/2 cups
- packed light brown sugar - 1/2 cup
- instant espresso powder or 2 T brewed coffee (optional) - 1/2 tsp
- vanilla extract - 1 1/2 tsp
- eggs - 3 large
- flour - 1 cup
- mini peanut butter cups - 1 cup
- semi sweet chocolate chips - 1 1/2 cups
- creamy peanut butter - 1 1/2 cups
- butter - 1 T
- Rice Krispie cereal - 1 1/2 cups
Instructions:
Melt 3/4 cup butter and 3/4 c chocolate chips until mixture is smooth, stir in sugar and brown sugar. Add espresso powder and vanilla, stir until smooth.
Whisk in eggs until incorporated. Sprinkle flour over top and fold until just combined. Stir in 1/2 c chocolate chips; pour batter into a greased 13 x 9 inch baking pan.
Bake in a preheated 350 degree oven for 25 minutes or until brownies are mostly done.
Remove from oven and sprinkle chopped peanut butter cups and 1/2 c chocolate chips over top, return to oven and bake 3 - 4 minutes. Place pan on wire rack to cool.
Combine and melt 1 1/2 cups chocolate chips, peanut butter and 1 T butter, stir until smooth. Add cereal and toss to coat. Spread mixture on brownies, cover and refrigerate at least 90 minutes until topping is set before slicing. Cover and refrigerate, for up to 1 week.
