Lava Cookies
Ingredients:
- butter, softened - 1/2 cup
- packed light brown sugar - 1/2 cup
- sugar - 1/2 cup
- egg - 1
- vanilla extract - 1/2 T
- flour - 1 3/4 cups
- salt - 1/2 t
- baking soda - 1/2 t
- milk chocolate chips - 1 cup
- hot fudge, room temperature - 1/2 cup
Instructions:
In a bowl, cream together butter, brown sugar and sugar, mix until light and fluffy. Add egg and vanilla; mix well. In another bowl sift together flour, salt and baking soda, slowly add dry ingredients into the wet; mix well. Fold in chocolate chips.
Grease the cups of a muffin tin. Take a heaping tablespoon of cookie dough and fit into 10 muffin cups. Make a small indentation in the dough. Pipe about a tablespoon of hot fudge in the center of each cookie. Take a heaping tablespoon of cookie dough and flatten it to fit in the muffin cup. Place flattened cookie dough on top of the fudge, carefully press the cookie dough layers together. If you have leftover dough, make additional cookies.
Bake in a preheated 350 degree oven for 15 - 20 minutes or until the edges start to brown. Remove from oven, run a knife around each cookie to ensure cookies aren’t sticking to the pan. Let cookies cool completely before removing from the pan.
To serve, heat cookies in the microwave for 15 - 20 seconds for centers to melt. Top with ice cream and additional hot fudge.
